GENERAL KNIFE CARE
All knives are susceptible to damage and rust if not properly cared for (including stainless steels). To extend the life of your knife, follow these simple steps:
clean and thoroughly dry after use
maintain a sharp edge on the blade
avoid extreme temperatures (e.g. do not put in dishwasher!)
lightly oil blade with food-safe mineral oil when not in use for an extended period of time
store outside of sheath to prevent rust development
maintain the finish on the wood using Tung-oil or equivalent
A special note on high carbon blades:
High carbon steel knives require a little more love and are our personal favourite
It's especially important to hand wash and dry them quickly after use--if left to air dry they will rust
High carbon steel will react with foods and darken. This is a natural process where a patina will develop on the steel, creating a layer of protection against oxidization and rust.
Many of the high carbon steels we make come with a forced patina or acid stonewashed finish. These will constantly change over use as the natural patina takes over tells the story of the knife
Don't be afraid to use them--a well used knife is less likely to rust
